I have to extract some files to edit a game and I was wondering if programs like stuffit expander can do that. I tried to extract an MPQ file with it but it gave me the "This file does not appear to be compressed or encoded" message. Is there something special you have to do or am I using the wrong program entirely? If so, what are some of the well-known ones (that run on Mac) because I've probably heard of them or have them.

I think you need to use MPQview, which I don't know it it runs on MAC, if it's a *nix app then you're in with a good chance of making it work. Found this resource here:
