well look at calumsmusic.netfirms.com compared with polytheism.org.uk or orkney.cjb.net - (and look at the html code too) ok neither is perfect but the first was done in dreamweaver and the second by hand (although i have cleaned up the former a bit by hand since then).
i recommend using a text editor. maybe emacs can be compiled with gcc on MacOSX, don't know...
if you really need wysiwyg, openoffice.org is available for MacOSX running XWindows.

http://www.entropy.ch/software/macosx/#neditvim's a text based editor, i think it is colour coded text for various tags etc. nedit is a notepad like editor for XWindows (this is the MacOSX jaguar version) and i think it's colour coded too.
I've used all four of these things, but only under linux, or mswindows/caldera dr-dos, not macOSX, so your mileage may vary!
